Blueberry Cobbler Recipe
Ingredients
- 1 stick of butter
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- 2 cups blueberry pie filling (recipe below)
Cook Time
50 to 60 minutes

6 to 8
How to Cook
- Preheat oven to 350 degrees.
- Place 1 stick of butter in a square baking dish while the oven preheats to allow the butter to melt.
- In a separate bowl, mix flour, sugar, and milk until smooth.
- Once the butter is melted, remove the dish from the oven and pour the batter on top. Do not stir.
- Spoon the blueberry pie filling over the batter.
- Bake for 50 minutes. If the center has not fully set, continue baking in 5-minute increments until the top is golden and the center is firm.
- Serve warm with vanilla ice cream or whipped topping.
Homemade Blueberry Pie Filling
Ingredients
- 2 pints fresh blueberries
- ¾ cup granulated sugar
- 2 tablespoons water
- 1 tablespoon fresh lemon juice
- 3 tablespoons cornstarch
- 2 tablespoons butter
- ½ teaspoon grated lemon rind
- Optional: ½ teaspoon cinnamon

50 to 60 minutes

How to Cook
- Combine 1 cup of blueberries with sugar in a pan.
- Simmer on low heat until the sugar melts and the mixture becomes very liquid, about 5 minutes. Stir frequently.
- In a small bowl, combine cornstarch, water, and lemon juice.
- Add the mixture to the pan.
- Cook over medium heat until it reaches a full boil and thickens.
- Pour the mixture into a large bowl and let it cool until warm.
- Fold in the remaining blueberries, lemon rind, and butter. Add cinnamon if desired.
- Let it cool before adding to the cobbler. Use any extra for oatmeal, pancakes, or ice cream topping.
